Slow food cultural association, born in 1986 to preserve food&wine quality
A full week end to discover the territory where the association was born, to live the feeling and to experience the philosophy of Slow Food.
Arrival in Pollenzo (Bra) and check in at 4 stars hotel ALBERGO DELL AGENZIA in the Unesco heritage Savoy castle. Accomodation in double room, B&B treatment.
Meeting with the tour guide, food expert and sommelier.

Pollenzo, Slow Food Università di Scienze Gastronomiche. Welcome from a Slow Food member and guided tour of the University. Meet & greet with the students and visit of the laboratories.
Banca del vino – Pollenzo Unesco Savoy complex.
Visit of the caves.
Welcome aperitif with the sommeliers.
Dinner at the Garden Restaurant at Albergo dell’Agenzia. Tasting menu Tradizione Piemonte, 5 courses, wines included paired by the sommelier.
Breakfast in the hotel.
LAB 1 Master of Food Sensorial Education Laboratory.
The role of the 5 senses in tasting to recognize flavours and quality of food and wine. Sensorial training: bread and extra vergin oils tasting; beer and cheese tasting.
Transfer to BRA. Beginning of the experience at the Association headquarter, meeting with Slow Food people to see how they manage the work worldwide.
LUNCH at BOCCONDIVINO Slow Food restaurant. Light Tasting menu 3 courses, paired with wines inclued.
Guided tour of the historical center of BRA throughout the main medioeval and baroc landsmarks, visit of the “Slow Food places” to discover where Slow Food association was founded.
LAB 2 Cheese laboratory. Finally stop at GIOLITO, historical cheese atelier and store. Guided Tasrting and training of the best quality piedmontesee cheese selection, including several rare cheeses and some Slow Food presidium project cheeses to Learn how to recognize the different cheese (oak, cow, sheep etc) by the senses.
Transfer to ALBA
Short walk along the medioeval streets of Alba to discover the famous towers and to catch the feeling and the magic atmosphere of the medioeval city of truffle.
DINNER at the Slow Food restaurant OSTERIA DELL’ARCO. Tasting menu 5 courses paired with wines.
DINNER at PIAZZA DUOMO restaurant. 3 Michelin stars Cef Enrico Crippa. Gourmet tasting menu paired with different wines.
Breakfast and check out.
TRAINING VISIT 1: the wine in the cave. Visit of a Slow Food suggested wine producer. Guided wine tasting.
TRAINING VISIT 2: the cheese in the farm. Visit of a Slow Food suggested cheese producer. Guided cheese tasting and light lunch.
Transfer to the hotel, check out and leaving of the guests.
